Winery Notes

Aromas of dulce de leche, honeysuckle, and ripe apple paired with a subtle vanilla show the nuanced oak treatment.  There is freshness yet balance in the flavors of ripe peach, bosc pear and Gravenstein apple which give way to an incredibly long finish.

 

Winemaking

We picked individual vineyard blocks with the perfect balance between ripeness, sweetness, acidity, and flavor and then fermented them separately. This wine went through 100% complete malo-lactic fermentation in order to allow a wonderful creaminess and roundness to suffuse the wine.  The lots were then oak-aged with a mix of medium and medium + French oak.

 

Grape Sourcing

Planted on bench lands and sandy, well-drained sites in Monterey County, our vineyards dip in and out of the fog line during the ripening season.  Because we control the winemaking process from vineyard block to bottle, we are able to showcase the Monterey AVA in this bottle.

Winery Notes

This Cabernet Sauvignon has a full fruit expression with refined structure and smooth texture. Aromas of dried cherries and plum open into a silky mouthfeel of red and black fruit flavors with a long, velvety finish.

 

Winemaking

After gently de-stemming the grapes, the must was fermented on the skins for up to two weeks at ~80°F because warm temperature fermentation aids in extracting color and desirable tannins. The next step was pressing the fruit gently to avoid the overly drying tannins found in the seeds. After pressing, the wine was racked into oak barrels to age for several months prior to bottling.

 

Grape Sourcing

The Oak Knoll District (OKD) is located at the mouth of the Napa Valley and lies at the southern end. The growing season is longer—cooler in the summer than the warmer Upper Valley and drier in winter allowing soils to warm earlier in the spring. With moderate temperatures maintained by the daily cool breezes off of the San Pablo Bay, means that the fruit can ripen slowly, maintaining freshness and aromatic lift, while developing a soft mouthfeel with balanced alcohol and acidity.

This Cabernet Sauvignon is pure elegance in a glass. Flavors of rich blackberries, black plum, dried herb, sweet oak spices, vanilla bean and toasted almonds unfold in mesmerizing layers, sending rings of deliciously intense complexity across the palate in a tasty expression of power and elegance.

The Oakville District is located in the Napa Valley and was formally declared a distinct appellation within the Napa Valley AVA in 1993. The soil of the Oakville AVA is the result of sedimentary deposits from the hills that form Napa Valley. The soil is gravelly and sandy, with exceptionally good drainage. The portion of the AVA between State Route 29 and the Silverado Trail is a mix of clay and well-drained sandy loam. Oakville has a warm climate that well-suited to growing divine and outstanding Cabernet Sauvignon fruit.
